Apart from Uttar Pradesh, the kimami vermicelli here is sent to West Bengal, Chennai, Delhi, Mumbai and Maharashtra as well as Kolkata. People of these states are very fond of the sevaiya of the city of Nawabs.

Even before the beginning of Ramzan, the phase of making vermicelli has started in the factories of Lucknow. These days, the work of making vermicelli is going on 24 hours in factories. Apart from this, they are also being packed and sent to the market.

That’s why Kimami vermicelli is special
There are about 60 vermicelli making factories in Lucknow. Unais, owner of a very famous factory in Lucknow, told that Lucknowi Sevaiya Kimami is considered very special for Eid. Vermicelli like here will not be available to eat in any other state, hence their demand is the highest.

This much is the daily production
Unais told that Kimami Vermicelli is very soft to eat. It does not spoil even if kept for several days. These days, workers are working 24 hours a day in the factory, so that Lucknowi sevaiya can reach other states on time. He told that people contact the factories in large numbers every year to book the services so that it can be delivered to their loved ones. 15 to 20 quintals of vermicelli are being made daily. He told that within just two days people have booked sevaiyas worth more than 6 crores.

This is how kimami vermicelli is prepared
Unais told that first of all let’s take flour. It is put in a machine and mixed well. Then when the flour is put in the second machine, it comes out in the shape of vermicelli. Then it is dried on thin sticks in the sun for 5 to 7 hours. After it dries, it is kept in a furnace on low flame. After 8 hours, it is taken out again and waited for it to cool down. Then it is wrapped in paper, packed and sent to the markets.

This is the price in Lucknow
The biggest markets for vermicelli in Lucknow, the city of Nawabs, are Aminabad, Rakabganj and Nakhas. The price of vermicelli here is currently Rs 40 to Rs 70 per kg, whereas at the time of Eid in 2023, the price was Rs 30 to Rs 40 per kg. Traders here have expressed the possibility of further increase in their prices by the time Eid arrives.
